The care, the gestures, everywhere, every time. Over time, Sapaio has marked its practices, in the vineyard and in the cellar, with a careful process of respect, research and constant innovation.

Innovation

CONCRETE VATS. To best express the intrinsic characteristics of the vines and their terroir of origin. Unlike steel vats, in which there are electrostatic currents, concrete vats are able to ensure more stable temperatures. This not only allows the wine to blend better, but also to be closely monitored while it slowly matures. What’s more, because cement is a neutral material (unlike wood), it does not alter the important aromatic evolution that takes place during the polymerization of tannins, a process that results from micro-oxygenation. After 14 months of aging in barriques, Volpolo matures into a blend, ready to be enjoyed from the moment it is purchased.

WOODEN VATS. Here, the wine evolves more slowly.
After almost two years in French barriques and a taste test, the wine completes the aging process in truncated cone wooden vats. Unlike barriques, vats result in less oxygenation and fewer notes of wood, while enhancing the varietal aromas and expression of terroir.
This results in a more elegant, structured and complex wine.
