CONCRETE VATS. These allow the wine to mature at a controlled temperature. Concrete vats permit the intrinsic characteristics of the vine and the terroir of origin to be expressed, while also providing greater integrity and structure. The wines are blended more effectively thanks to an internal thermoregulation system within the concrete. After 14 months of aging in barriques, Volpolo becomes a blend, ready to drink in the first few months after purchase.
WOODEN VATS. Here, the wine evolves more slowly.
After almost two years in French barriques and a taste test, the wine completes the aging process in truncated cone wooden vats. Unlike barriques, vats result in less oxygenation and fewer notes of wood, while enhancing the varietal aromas and expression of terroir.
This results in a more elegant, structured and complex wine.
